Having a firm texture, it is also great in a fish stew  – one of our favourites. Pan frying in butter to get the skin nice & crispy is our favourite.

We start with a whole fish within the weight band you have selected, then prepare to your chosen requirement. As a guide, if you have your fish filleted you should receive approximately 40% of the original fish weight in fillets.
