Our favourite when we visit our local fish & chip shop for fish & chips on the harbour head.

    It is said of the John Dory fish aka as the St. Peters fish because of the thumb print on the side. In its mouth was a coin to pay the temple tax collectors. It is a highly prized fish, delicious sprinkled with a little paprika and baked on a bed of onions, red peppers, cherry tomatoes and black olives, and served with a mushroom risotto.

    Ling has a firm flesh with a good flavour and is sometimes substituted for monkfish. Part of the cod family, it is perfect for casseroles, soups, curries and fish pie but can also be cooked in the same way as any other white fish.

    Firm, sweet, white flesh without bones. Wrap in Parma Ham or locally produced Smokey Bacon with some Garlic and Rosemary and bake in the oven, absolutely delicious. Otherwise a great one for a luxury fish stew, pie or curry.

    Once very underrated, Gurnard is now a highly prized fish that looks beautiful, has a delicious firm white flesh. It can be filleted or cooked whole and is great for poaching, frying and baking. Having a firm texture, it is also great in a fish stew  – one of our favourites. Pan frying in butter to get the skin nice & crispy is our favourite.
