    Once very underrated, Gurnard is now a highly prized fish that looks beautiful, has a delicious firm white flesh. It can be filleted or cooked whole and is great for poaching, frying and baking. Having a firm texture, it is also great in a fish stew  – one of our favourites. Pan frying in butter to get the skin nice & crispy is our favourite.

    It is said of the John Dory fish aka as the St. Peters fish because of the thumb print on the side. In its mouth was a coin to pay the temple tax collectors. It is a highly prized fish, delicious sprinkled with a little paprika and baked on a bed of onions, red peppers, cherry tomatoes and black olives, and served with a mushroom risotto.
